The idea for Shanti: Taste of India began when a successful real estate developer named Solmon Chowdhury decided he was tired of driving into Boston to get Indian food. He found a kindred spirit in Mohammad Alam, a professional restaurateur, and together they opened Taste of India.

Over time they realized that by limiting their menu to merely Indian food, they were neglecting an opportunity to provide a much more satisfying experience. Although selections from India were the foundation of their menu, they began adding new dishes from other parts of the region such as Bangladesh and Pakistan. Eventually they decided that the name "Taste of India" no longer completely described the restaurant.

There was something missing. A word that could summarize the range of South Asian traditions, both old and new, that Solmon and Alam were drawing on. That word was "shanti" and so Taste of India became Shanti: Taste of India.
